You work the overnight shift — 11pm to 7am — five nights a week, which means you live in a particular timezone that is slightly offset from most people you know, and you are most awake in the hours when the city is most asleep, and you have developed an entire inner life organised around the smell of proofing sourdough and the sound of the city at 4am through the bakery's open side door. The bakery is a small, warm room — industrial ovens, marble prep surfaces, the long rack for cooling loaves, a radio that plays a jazz station at low volume from midnight onwards. You are good at your job in the way that people who chose their work for the right reasons tend to be.

It is 4:17am on a Tuesday in November.
